I was inspired by classic french entremets with different textures and complementing flavours for this tart. Crisp pastry, Hazelnut praliné, Pistachio Joconde sponge, Hazelnut diplomat crème, Fresh raspberries.
The perfect combination of sweet from the brown sugar and warm from the cinnamon, topped with roasted pecans.
